Antioxidant Warrior Dinner
Give your body the raw materials it needs to protect you while you sleep. This recipe is full of copper, zinc, and manganese … you’ll use these nutrients to create the mighty Superoxide Dismutase antioxidant!
You will need:
- 1 sweet potato
- 1 cup brown or wild rice
- 2-3 cremini mushrooms
- 2 cups baby spinach
- 1 Bell pepper
- 1 carrot
- 5-10 Brazil nuts
- A quarter cup of sunflower seeds, sesame seeds, and pumpkinseeds
- 3 tablespoons olive oil
- 2 teaspoons coconut oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon apple cider vinegar
- 1 teaspoon miso paste
- Cumin and turmeric
Sweet Potato Mash
- Wash and chop 1 sweet potato
- Steam for twenty minutes (while steaming, prepare salad)
- Mash with a fork, adding a tablespoon of olive oil, plus a tsp each of cumin and turmeric and a pinch of nutmeg (how easy was that?!)
Seed and Rice Salad
- Cook 1 cup of wild or brown rice
- Wash, chop, and sauté 1/2 cup cremini mushrooms. Sauté in a tsp of coconut oil or butter.
- Drain rice and stir in 1 tsp olive oil, 1 tsp of apple cider vinegar, and 1 tsp miso paste. Mix in mushrooms and set aside.
- Wash and set aside 2 cups baby spinach
- Wash and chop one sweet pepper and one carrot and toss with baby spinach
- Chop 5-10 Brazil nuts, and add to a quarter cup of sesame seeds, pumpkinseeds, and sunflower seeds. Add this mix to rice and mushrooms.
- Add rice, mushroom, and seed-nut mix to salad and drizzle olive oil and balsamic vinegar over top
Serve with Sweet potato Mash on the side for a protein-rich antioxidant dinner.
